I'm sure you've figured out by now that I like to cook. I had some inspiration over the weekend. I had some blueberries just sitting in my refrigerator that were just calling my name.

So what did I do? Well, I thought I would make some muffins. I had some canned pumpkin in the house too, so there was my inspiration. What did I make? Pumpkin Blueberry Muffins!

I just used the ingredients that I had in the house and added a few that I thought should be in there too. Here's what I used:

  • 2 cups flour
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/2 TBS cinnamon
  • 1/2 TSP nutmeg
  • 1 TSP baking soda
  • 1/2 TSP salt
  • 1 1/2 cups canned pumpkin
  • 2 eggs
  • 1/4 cup apple sauce
  • 1 cup blueberries

Mix dry ingredients, in a separate bowl mix pumpkin, eggs & apple sauce, then combine with dry ingredient mixture. Fold in blueberries.

Fill muffin cups about 3/4 full and top with a mixture of 3/4 TSP nutmeg & 1/2 cup sugar, then bake at 350 degrees for about 30 minutes.

Mine turned out great. Even my super picky husband liked them... and he doesn't even like blueberries! Enjoy!
